Hafod is an organic raw-milk mature cheese made on Wales' longest established organic dairy farm, Bwlchwernen Fawr.
The cheese is made by Sam and Rachel Holden at the family farm in West Wales using only organic milk from the farm's 65 Ayrshire cows, which is rich and creamy - ideally suited to cheese. Hafod is made to a locally developed cheddar recipe, using traditional techniques in a small open cheese vat. It is then matured for more than 9 months during which time it grows a mould rind.
The name 'Hafod' comes from the Welsh for 'summer pasture' and is an area of river meadow where the farms cows graze as heifers, before joining the milking herd.
